
Asians love their instant noodles just like Americans love their frozen pizzas.
It is easy, fast (5 min), and easy to wash up. If you are having cup/ bowl noodles, you don’t even need to wash up. Because everything can be done in the cup or bowl from start to finish.
As I grow older, I prefer something easy, convenient, and yet healthy. Chinese noodle soup has been quite a staple in my household since I was a kid. And now it’s also something I’ll turn to for a comforting lunch.

The Noodle Soup
Mushroom Chicken Noodle is a flavour from one of my favourite instant noodles brands from Japan. Inevitably, as with all convenient food, it contains a lot of additives and preservations in exchange for a longer shelf life.
I decided to recreate the recipe and make a copycat version of it.
While the prep work can take any time between 2 hours to 24 hours because you need the marinade to do its magic, the actual cooking can be done in less than 30 minutes.
Here, I’ll be breaking up the different components of the recipe.
Noodles
To have a quick meal, your choice of noodles has to be quick-cooking. Do not use noodles that require you to blanch and rinse with running water before you can use them in soup. That will take up too much time. You require something that you can drop into the soup directly to use.
Here are 2 examples that you can use for a quick noodle dish.
Aromatics
In Asian cooking, aromatics such as garlic, ginger, and spring onions are very important. However, too many of them will overpower the taste of the other ingredients.
Freshly sliced ginger and garlic is important to bring out the flavour of the soup and chicken. Please do not omit them. As they are very common aromatics, it’s easy to buy them from your local supermarket or grocers.
Soup Stock
Soup stock, however low sodium, will pack a wholesome taste into the dish. Whether you use homemade, ready-to-use, or even concentrate, it doesn’t quite matter. Using low sodium, on the other hand, allows you to play around with seasoning and condiments to ensure that your dish is not overly salty.
These are the few that I enjoy using frequently for many of my dishes.
